You can use Adobe Photoshop or Gimp to edit PNG, PSD ans JPG. And Adobe Illustrator or Inkscape to edit AI and EPS.

You can edit the colors of each vector object by using the "Re-color Artwork" function in Adobe Illustrator (Found in the EditEdit ColorsRe-color Artwork menu).
