The file format is EPS8 which can be opened in all the common vector editors and also in Photoshop if you want to convert them to raster images like PNG or JPG. I recommend using a vector editor to change the colors (just double click the swatch in the swatches panel), but you can also use the "Hue/Saturation..." function in Photoshop.
